Pesto Recipe Blog Hop
Pesto is a perfect addition to the dinner menu any time of year. With basil bursting from many people’s gardens this time of year I decided to jump at the chance to hop a few blogs and add some pesto dishes to my menu.
My family likes to eat meals with subtle hints of garlic or onion. Pesto is no different. It’s important for the tastebuds in my house to enjoy what I cook right?
I found a yummy Creamy Garlic Pesto Chicken recipe and it was a perfect family-friendly dinner.
One pot recipe
I love meals that don’t make a mess. This one was perfect! I always try to start with most of the ingredients out so it makes the cooking process go quickly.
Multi-Tasking
Multi-tasking while I cook is also a nice way to speed things up. I typically read the recipe first, then I’ll try to combine steps or do two things at once…

Made the sauce.
Simple Steps
Once the oil was heated, and the pesto sauce was sitting ready for its turn, I seared my chicken on both sides.
This only took a few minutes. While the chicken was cooking I cut the bell peppers.
Add the Veggies
Once the chicken was well-seared on both sides I did as the recipe said and removed the chicken from the pan for a couple minutes. Then I added the veggies to the existing sauce in the pan.
Last Step for Yummy Pesto
The final step was to add the chicken back to the pan and then pour the pesto sauce on top. I let it simmer for a few minutes while I cooked bow tie pasta to pair with the meal.
Pesto Dinner with Flavor
Our pesto dinner was served once the pasta cooked through and we enjoyed a nearly (because of the pasta) one-pot family friend meal.
We love this recipe and plan to cook it again. Eatwell101 created an easy flavor infused meal that my family loved.
